2023 Berg Rottland Riesling Auslese

Selective hand-harvesting of healthy grapes from one of the finest vineyard sites of Rüdesheimer Berg Rottland. The grapes are gently pressed in a traditional basket press. The must is naturally clarified by settling before undergoing spontaneous fermentation with indigenous yeasts for eight weeks at 18°C. Fermentation is naturally halted by the cool outdoor temperatures of the winery courtyard at 2°C, preserving the wine’s natural residual sweetness. The wine is gently filtered only once before bottling to retain its vibrant fruit aromas and the naturally occurring carbon dioxide from fermentation.
